Last night was a relaxing night being snowed in.  We made some No Pudge Fudge brownies with half of a marshmallow in them.  I put them in a muffin pan to keep them portion control friendly.

Baked at 350 for about 20-25 minutes (just keep checking on them).

And we had a bottle of Trader Jose Light beer with a lime each.  Tasted just like Corona!

You know how you get the lime in the bottle? Stick your thumb in it and turn it upside down right?  Well, we found out quickly that my thumb was way too small to plug the bottle so the husband had to do it for me!

This morning I woke up and made some chocolate chip pancakes with some recipe I found on Allrecipes.  Be careful,  I think this website gave my computer a virus and we had to run a long virus scan on it this morning.  I had a bunch of trojans! ugh!

I ate a few with Skippy Super Crunch PB and the husband used Peter Pan creamy.  I hate creamy pb because I feel like a dog trying to scrap pb off of the roof of his mouth!

Slow Cooker Red Beans & Rice

I’m glad I bought the spicy jalapeno sausage from TJs otherwise this recipe would have been just meh. It was ok, but not my favorite.  It smelled awesome while cooking, but I was disappointed.

We snacked on this: Frank’s Red Hot and 100 calorie Jolly Time Popcorn while we waited on the Crock Pot.

So there is last week’s recap.  I’m going to count the recipes in the book to see how many there are.  I am determined to make every one this year!  Since we are snowed in today, I am going to read more of “The Time Traveler’s Wife",” since I finally finished to “Twilight” series!  Those books were good, but the chapters were never ending!  I might play in the snow today too 😉

Tonight was Barbeque Meat Loaf night.

The husband is not as big of a fan of meat loaf as I am.  However, I could probably get him to eat anything as long as it has BBQ sauce on it. This meal was super good.  The upside: It has super easy clean up, it’s quick prep time and it’s sooooo yummy.  The downfall:  It takes an hour to bake!  Yowzas!  So we were drooling by the time it came out of the oven!  The husband said it was the best meat loaf ever so that has to say something!

We did the newspaper crossword together to pass the time.  Okay, really, don’t tell anyone that.  We are not turning into an old couple!  I promise!  Believe me?  It was worth a shot.  We also like to do puzzles, watch the news before bed, stay in rather than go out…don’t judge 😉 I think it’s called “Marriage.”

Ingredients: ground red pepper, salt, yellow bell pepper, cole slaw, reduced fat mayo, and cider vinegar.  It was good, but the vinegar was strong!

And a french roll from TJ’s.  With Land o Lakes light butter.

I enjoy Sunday mornings. Really, I do.  It’s Sunday nights that I hate.  The thought of going to work after a relaxing weekend, the weekly routines, the coming home exhausted and then making dinner…bleh!  But, a Sunday morning is wonderful. 

This morning the husband and I slept in!  It was so nice.  We went to our friend James’ birthday party last night.  Just a small get together.  It was funny.  A lot of his friends are so hilarious.  My cheeks hurt from laughing by the end of the night!

Here are the Thursday and Friday night meals I needed to catch up on!

Thursday night was Creamy Mac n Cheese with a Seven Layer Salad.

It looked so good and we were so hungry.  Wrong!  It was AWFUL! By far the worst meal I’ve made from this cookbook.  OMIT THE DIJON MUSTARD!

I would recommend this meal, if it did not include dijon mustard!  I was skeptical myself, but I put the two teaspoons in like it asked. It was terrible.  I was so sad about it.  The husband tried to appease my feelings by eating more than one bite, but was pretty relieved when I threw in the towel on this meal.  We just ended up eating the Seven Layer Salad instead.

Here is the recipe for if some reason you like a lot of dijon mustard taste:

Creamy Stove-Top Macaroni and Cheese

If I ever want to make this again (still having bad thoughts) I will definitely  nix the crazy ingredients and just make the mac n cheese. But hey, you may like it!

Friday night the in laws came over and I made:

Jambalaya with Shrimp and Andouille Sausage

along with fancy french cut green beans with a mixture of mayo, mustard, lemon juice, celery salt… you’ll have to look it up in the cookbook beside the recipe!

It was a little spicy, but so good.  I love love love Frank’s Red Hot Sauce.  If your recipe calls for hot sauce, you must use this!

And then we made homemade icecream.  A simple recipe that our friends James and Shelby gave us:

one can sweetened condensed milk

one half gallon chocolate milk (I used reduced fat)

one tub of Cool Whip

It tastes just like a frosty from Wendy’s!  Soooo good.

Then last night we ate some pizza and went to our friends party.  Overall, it’s been a good weekend.  The husband and I are just lounging around and then going somewhere to eat.

These tasted like Honey Grahams. Oh. My. Word.  I see myself using these for dips in the near future! And of course, a little glass of chocolate milk!  I’m going to read some more.  I am finally on the forth book of the Twilight Series (man, those chapters are long) and then get ready for dinner! 🙂

Happy Monday guys!  Here is a recap of the crazy weekend I had!

Friday I woke up and was ready to go shopping!

I ate this on the way to Cary to go to grocery shopping.  I bought these at Aldi.  Pretty good, but not very filling.

Then I was stuck behind a garbage truck for what seemed like forever.  There was so much traffic on the other side I couldn’t pass.

This store just puts me in awe.  I am amazed by all of the cool and healthy food items they have.  My wallet hurts every time I go in here because I want to buy it all!

I bought some chocolate milk (it was supposed to be soy, but I wasn’t paying attention!), some Oikos yogurt and a few other items. 

I then went here: The mothership!

I can buy a weeks worth of groceries for around $100 that are fresh, gourmet and inexpensive. I love love love this store.  I could spent hours in here.  I’m so glad they built one here. It is so worth the drive.

Brandon and I are spending a little more in groceries, but think of all the money we could be spending eating out.  It makes a huge difference.

I think it was Jenna who said she feels rich when she has groceries and books.  I feel exactly the same way.  TJ’s and Barnes and Noble make my life complete.

We rented “Twilight” Friday night and then Saturday we went to see this:

New Moon!  It was good, some animated scenes were a little silly, but I enjoyed it.

Then the hospital craziness happened yesterday.

I only got 6.  Brandon had been through a lot so a little treat was needed 😉

I went to Harris Teeter today.  These bottles of water were only 3 (24 packs) for $10!  That’s awesome.

We aren’t big breakfast people, so maybe this will help.  These are little packets that you mix with milk. They are worth a try.  I am not into a lot of “packaged” stuff. Like oatmeal packets, for example, I’d rather have fresh quick oats that packaged “peaches n cream” packets.  The oats in the tub are much better for you! So these will be used sparingly, but it will be nice to get some vitamins in me in breakfast form. 

I made some Crystal Light lemonade for the husband.  I read online that it helps with kidney stones.

We did it!  We didn’t eat out this week (minus yesterday-we went to Cracker Barrel in the morning, but we didn’t pay) so that means we saved a bunch of money.  I swear, even the milkshakes we would get can add up!  We had this yummy pizza last night:

I bought a 16 oz whole wheat pizza dough from Trader Joe’s.  The recipe called for 10 ounces so I tore some of the dough away until  I got it just right.

Bake the crust at 400 for 8 degrees.

Then rub olive oil and half of a garlic clove on the crust.

4 oz. of mozzarella.  Disclaimer: I already had bagged mozzarella cheese.  Next time I am getting fresh.  I think it will make it even better.

Spread the tomatoes and and leave about a 1/2 in border.  Then top with mozzarella.

Bake for another 12 minutes and then add fresh basil and vinegar and oil mixture.

On the side we had Lemon Broccoli. 4 cups of broccoli, lemon juice, onion, s&p  and a minced clove of garlic all mixed together. mmmm!

This steamfrest broccoli made things a lot easier.  Only took 4 1/2 minutes to heat up!

It was super yummy.  Pizza and I have a relationship.  It’s true.  I am in love with pizza. Oh yeah, the husband too.  But a lot of my love goes to pizza.  The serving size was only two pieces.  We were good and ONLY ATE TWO pieces.  Talk about willpower! 

We stepped on the scale this morning to see how we were doing since we have been eating healthier.  I was down 3 pounds, the hubby was down 4.  Woo hoo!  I would have been happy with any loss, but it’s always nice to see me go down more than a pound.  Yay Cooking Light!

Today was a little crazy.  We were watching the movie “The Proposal,” when all of the sudden the husband gets on the floor and literally starts rolling in pain.  He started sweated a lot and ran to the bathroom.  He told me to call 911.  I have never seen him in so much pain.  The ambulance came and I rode along.  I cried the whole way to the hospital. He was moaning in pain the whole way.  He had a CT scan, blood drawn and a urine sample was taken.  He was diagnosed with 3mm kidney stone in his left kidney.  I am monitoring his medicine now and give him a lot of water.  Nurse Krista to the rescue!  I took tomorrow off to take care of him.  Hopefully it will just dissolve and not pass!  It looks pretty big on google images!

Pray for Brandon.  The in laws are bringing us Outback since Sunday is our “cheat within reason” day and we are going to finish watching the movie!  What a crazy day!
