Today is a little strange.  I had some comp time built up at work and had to take it.  I went in from 8:15-10 and then came home.  It feels like I’m skipping school!

This morning I ate a banana with chocolate pb in the middle.

I did laundry, cleaned the fridge and freezer out and picked up around the house.  Whew did my refrigerator need to be cleaned out.   I also checked all of the expiration dates and cleaned out things that were close to expiring.

At 12:30 I stopped and made lunch.

A turkey sandwich on TJ’s high fiber bread with roasted turkey and muenster cheese.

My bananas were on their last leg so I peeled and chopped them up.  I put them in the freezer to use for smoothies later.

I am sitting here with Vick’s Vapo Rub on the tip of my nose so I can breathe/write this post. Of course, any week I want to get healthy or start a new work out routine, I get sick.  That’s just the way life is. 

Anywho, despite my illness, I made my first recipe out of the Cooking Light cookbook tonight.

Turkey and Cheese Panini

The neat thing about the cookbook is that they give you a menu.  So it has a side, a meal and a dessert to follow.  Of course, you could just make the meal, but I am having fun with the menu.  I’m about lots of volume for less calories!

For the side item, there is Tomato Bread Salad.  However, I could not find a link on the website for the recipe.

Grape tomatoes halved.

Tomatoes mixed with 2 tablespoons water, 2 tablespoons light mayo, chopped parsley, diced avocado, 1/4 tsp. salt, diced onion, hot sauce…whew I’m tired.

What a fun little dessert. 

If you are going to make this recipe, I made a few modifications:
I used grape tomatoes instead of cherry (they were cheaper!)

I used sliced peaches in light syrup.  After all of the veggies being chopped, I was done slicing and chopping for the evening!

Recipe was loved by the husband and I.  His quote of the evening “It tastes fancy. You are an awesome cook!”  It’s so nice having helpful recipes for dinner.  Stay tuned tomorrow for more 🙂

This morning I went to Harris Teeter for triple coupons.  I spent $44 and saved $42! Woo hoo!  I love saving almost as much as I spend.  I have been clipping coupons forever for the anticipation of triples.  I was so excited that I forgot to eat breakfast.  Who does that?

Okay so I admit, I have been eating a bunch of garbage lately.  Milkshakes (not pictured and things like chicken tenders and bbq).  Time to whip my butt back in shape! 

For lunch today I made myself (it took a while) a healthy meal.

This AWESOME sandwich with a piece of turkey, fresh spinach, and a piece of muenster cheese melted on a 100 calorie Arnold flat bread in my toaster oven.

So glad the weekend is here! I didn’t work much this week, but this afternoon made up for the whole week.  There were so many patients worked in, it was ridiculous.  Anywho…

This morning I had a piece of whole wheat bread with Blue Diamond  Almond Chunky Butter.  It was so good.  It was my first time having almond butter and I loved it.

For lunch I had this:


Peppered roast beef on organic whole wheat breat with a little mayo, mustard and muenster cheese which is becoming my new favorite!

I also had a string cheese and some hummus with pretzel slims.

On the way home from work, this guy stayed on my windshield through about half of the ride!


He was excited about my blog and wanted to make his debut!  Buzz!

Tonight we went to Chic-fil-A and I got a grilled chicken sandwich with a fruit cup.  The fruit cup was so so.


We watched Survivor and now I’m getting pretty sleepy.  I think a cup of skim milk and my new Glamour is on the agenda tonight.  I’m so excited to go to Whole Foods and TJ’s tomorrow! 🙂

caffeine headache

I have not had enough caffeine today!  It kind of saddens me that I am that addicted to it.  I actually had a headache at work because I did not have my usual morning coffee. 

Before work, I had this for lunch:DSC_0157

This sandwich was on organic sundried tomato bread from Whole Foods.  It had two slices of yummy Trader Joes muenster cheese and natural deli turkey.  With a little mayo and mustard, it was so good!

I also had a few bites of TJ’s roasted garlic hummus with some pretzel slims:


I went to work and then dropped a coworker home.  We made Frito-ish Pie for dinner. 

Heat TJ’s turkey chili for 2 mins 30 seconds in the microwave

Pour onto a plate or a big bowl.

Add light shredded cheese, light sour cream, whatever you like!

I served mine with organic corn chips and jalapeno Food Should Taste Good Chips



We are watching Glee tonight and I will probably be wanting a snack later.  Have a good night!
