National Chocolate Day

For dinner we had Salmon Belle Mer cakes/patties. Listen to the description of this:
“Alaskan Salmon stuffed with a savory blend of long grain rice, surimi crab meat, monterey jack cheese, bay shrimp and seasonings.” It was so good!

I also made a pasta salad side with TJ’s vegetable medley and Tuscan dressing. I cooked the medley in a wok and then lelet it cool a bit. I then mixed the dressing (maybe 1/2 cup? eyeballed) with the pasta and set it in the fridge until cold.

I also made a pumpkin bread with a mix from Trader Joes. Can you see the trend here? What is one of my favorite stores? Anyone? Bueller?
The husband and I dusted all of our baseboards in the house. Teamwork! And now I am watching DVRed episodes of The Office and getting ready to eat a piece of pumpkin bread.

Shrimp~n~Grits

Tonights meal was inspired by a recipe I saw in The Whole Deal which is the coupon pamplet you can pick up in front of the store.

  • shrimp
  • hot pepper
  • green peppers, red peppers and onion
  • polenta grits
  • lemon juice
  • garlic
  • s&p
  • pieces of turkey bacon

I saw this book on Amazon and just had to get it.  Gotta get those Superfoods in!

I am like a kid in a candy store when it comes to getting mail!  I get so excited about it.  I also got the new Self issue in the mail as well!

Looking forward to a few more packages this week!  Off to grab a few pieces of salt water taffy!

Busy Bee

So this past week has been crazy.  I feel like life has not slowed down.

I got a mole removed 2 weeks ago because it looked “different.”  Friday, I went back to have more of the area around/underneath it removed because it came back abnormal. Now I have dissolvale stitches in my back.  The surgery wasn’t too bad, except when the nurse had the gauze close to my range of sight and there was more red on it than white! Yuck!  I felt kind of nauseous ever since.  It’s funny how I can assist in surgeries all week and look at other’s blood, but when it is your own,  it’s different. 

Then on Saturday we got our flu shots (that seemed to hurt worse than the stitches!) There were about 60 people sitting in our doctor’s office. This was there third free clinic.  We go every year since the husband got the flu from one of his students and then I got it.  That was the worst weekend of my life!

Shrimp scampi made with

-Butter

-Whole wheat thin spaghetti

-TJ’s tail off frozen shrimp

-Riesling white wine (mmm)

-Squash and zucchini

-olive oil

-salt and pepper

-a sprinkle of cheese

I made this dip with TJ’s homemade guacamole kit (harder than I thought, but it was more natural than buying the premade stuff), sour cream and fat free mexican blend cheese.

Served with Food Should Taste Good Jalapeno chips.  They are a new find for me: tortilla chips with a cracker texture and they are absolutely amazing! DSC00092

 Not too spicy!

Tonight we are off to Olive Garden.  Yay!
